Preparation, Assay and Stability Analysis of Curcumin-Polysaccharide Complexes

Curcumin is a hydrophobic plant polyphenol with various functional properties such as antioxidant, antibacterial, anti-inflammatory, blood lipid regulator, hypotensive and anti-tumour, etc. However, it sensitive to environmental factors light, oxygen heat, prone oxidative degradation loss of biological activity during processing, storage transportation, thus limiting its application. In this paper, chitosan curcumin were used form complex encapsulate protect curcumin, some modern assay techniques examine the structural analyze stability. RESULTS: Chitosan could nanocomplex resistance light heat was greatly enhanced after formation complex. Significance: This study great importance solve problems poor water dispersion, unstable physicochemical difficult application academic practical significance for future development utilization curcumin.
